This wine comes from the selection of the best from our Escarza vineyard, and only in exceptional years. Our vines are located on the southern slope of the Obarenes Mountains, in clay-limestone soil, at altitudes between 500 and 700 meters and with a north-south orientation. They are planted in trellises, with a planting density of 3,200 vines per hectare and dry farming.
Many green works are carried out, such as shoot thinning, leaf stripping, and removing grapes, always seeking maximum exposure to wind and sun, improving the microclimate at the cluster level, and adjusting production to the required quality.
Hand-harvested in 20 kg boxes with manual selection on the table to achieve the highest quality.
In a patient and meticulous process, alcoholic fermentation unfolds over 12 days, while maceration with the skins extends for 17 days, impregnating each drop with its essence. The temperature, carefully controlled, does not exceed 22º, ensuring perfect harmony.
With gentle movements and delicate pump-overs, along with manual punch-downs adjusted to daily needs, the must evolves slowly. Then, as in a ritual, it is transferred to new French oak barrels, where malolactic fermentation finds its home.
For six months, batonnage is performed every two days, enveloping the wine in a constant embrace until fermentation concludes, delivering a wine of unmatched character and soul.
Aging was carried out for 18 months in French oak barrels, of which 8 months were in new barrels, 5 months in one-year-old barrels, and another 5 months in two-year-old barrels. Individual barrel selection is performed for subsequent resting in a tank for 6 months, where natural stabilization by decantation is completed. After this, it begins its rest in the bottle for a minimum of 15 months.
This Graciano has an intense ruby color, very covered, with a very expressive, fine, and elegant nose. Ripe black fruit, aromatic herbs, and mint, well integrated with notes of wood, smoky, and mineral. Powerful, with very well-balanced acidity and alcohol, with silky tannins and a long finish. A very elegant wine with a 'wild' touch.
