This extraordinary wine originates from over 3.5 hectares of our revered El Bardal and Fuentenegra vineyards, nestled in the tranquil landscapes around Sajazarra. Cultivated on trellises at a density of 3,200 vines per hectare and maintained without irrigation, these vineyards benefit from integrated production techniques, completely eschewing the use of herbicides, chemical fertilizers, and systemic pesticides. This practice ensures the optimal ripening of the Graciano grapes, with deep respect for the natural environment.
The vinification process begins with alcoholic fermentation lasting 10 days, followed by maceration with the skins for another 14 days to extract maximum complexity and structure. Malolactic fermentation is carried out in tanks, further refining the wine's profile.
The aging of this Graciano takes place over 18 months in American and French oak barrels, alternating between new and used barrels, which imparts sophisticated elegance and notable complexity to the wine. Finally, the wine rests in large wooden vats for an additional 6 months, allowing its characteristics to integrate flawlessly.
