From the estates Los Corrales and Fuente Negra, nestled on the southern slopes of the Obarenes mountains in Sajazarra, comes a wine cultivated in clay-limestone soils at altitudes between 500 and 700 meters. The vineyards, oriented north-south, are planted in trellises with a density of 3,200 vines per hectare, and dry-farmed. They are grown using integrated production methods, without herbicides or systemic pesticides, achieving ideal grape ripeness and utmost respect for the environment.
Meticulous vineyard care involves leaf thinning, shoot removal, and selective grape thinning, ensuring optimal exposure to wind and sun. The harvest is done in 20-kilo boxes with manual selection on tables, ensuring the highest quality.
Alcoholic fermentation lasts 8 days, followed by a 12-day maceration with skins, under precise temperature control up to 24 degrees. Gentle pump-overs and manual punch-downs are adjusted daily. Malolactic fermentation occurs in tanks.
The aging process spans 14 months in American and French oak barrels, followed by 6 months in large wooden vats for natural stabilization. Finally, the wine rests in bottles, perfecting itself.
With a medium layer and an attractive cherry red color with violet hues, this wine offers a fruity nose with notes of licorice and red fruits, complemented by elegant, subtle oak. On the palate, it is unctuous with sweet, round tannins, harmonious and long-lasting, ready to be enjoyed now, while continuing to improve in the bottle.
